There is absolute management during their handmade collection with specific sizes and, at the same time, with strict quality sorting before going through the process of many months of natural fermentation, within a few hours of harvesting these Lemonenies olives, with minimal addition of salt at all stages.
A very important difference is that their salt content is at very low levels, throughout the fermentation process and in their final packaging, at a rate of less than 50% of the average salt contained in the respective olives that are usually circulating in the market.
