Its production methodology starts exclusively from our organic farms, which is why it is characterized by the international term single estate organic olive oil. There is absolute management of the semi-ripe and unripe olives during the handmade collection, with simultaneous quality sorting before the olive mill, which is done in a few hours from the optimal stage of olive harvest.
The monovarietal organic olive oil Armonia differs significantly from the classic olive oils, because it is produced, usually from mid-October to mid-November, with cold extraction of a few hours from the olive harvest, at 21-23 ° C and is therefore a cold extracted olive oil which requires at least twice the amount of semi-ripe and unripe olives for its production.
Characteristic of the superior certified organic olive oil Armonia is the very low acidity (many years less than 0.2%) which classifies it not only in the extra virgin organic olive oils but in the new category that is gradually created of extrissima, with corresponding chemical analysis indices.
It also has a high content of vitamins, predominantly vitamin E (a tocopherol), phytosterols and a very high level of polyphenols, mainly oleocanthal, which characterize it as a biofunctional phenolic olive oil with a health claim under the European Regulation (EU Health Claim 432/2012) which helps protect blood lipids from oxidative stress.
